Weeknight Recipe Roundup - Dinner in 30 Minutes or Less

I don’t know about you, but I am getting bored of our usual recipes and need some new cooking inspiration. When I was looking around for recipes, it occurred to me that it has been a while since I did a weeknight meal recipe roundup for the blog, so here you go! These recipes are perfect for weeknight dinners as they can be made in 30 minutes or less (active time). As I am vegetarian, I have included quite a few recipes that I have been eyeing, but there are also plenty of options for you omnivores. Check out the recipes & hope you enjoy!

Soup

Broccoli Cheddar Soup by Heidi Swanson on 101 Cookbooks (great site for healthy, vegetarian recipes)

Time: ~20 minutes

Serves: 4-6

*Vegetarian. This was the perfect recipe for a recent chilly evening (my family enjoyed it earlier this week). A delicious, creamy, and nourishing soup. Loved the toppings of the crispy, homemade mustard croutons and the dash of smoked paprika. If you do dairy, definitely add the crème fraîche. This was plenty for our family, but you can always make a salad as well for a full meal. Please note, recipe calls for an immersion blender. We used our Cuisinart as we don’t have an immersion blender - the Cuisinart worked just fine, but the soup likely would have been smoother with an immersion blender.

Mushroom and Farro Soup from Real Simple (November 2018)

Time: 30 minutes

Serves: 4

*Vegetarian. The cold, rainy weather we have been experiencing in Austin lately has made me crave big pots of hot soup. This recipe sounds like the perfect meal served with some fresh, crusty bread. This is going in our meal rotation soon.

Sausage and Spinach Tortellini Soup by Charlyne Mattox for Real Simple

Time: 20 minutes

Serves: ~4

*This looks like a nice, healthy, and quick dinner option. Given the greens in the soup, I would skip a salad and just serve this with a baguette.

Pasta/Noodles

Quick Pork Ramen with Carrots, Zucchini, and Bok Choy by Rhoda Boone for Epicurious (July 2016)

*I am planning to make this on a busy weeknight soon and will serve it as is for a super easy meal.

Zucchini-and-Mozzarella Frittata by Greg DuPree for Real Simple (June 2018)

*You can always skip the crushed red pepper or just use it when serving if some family members don’t like spicy foods. This is another meal that I will plan to save for a busy weeknight and will serve with a side of fruit salad or regular tossed salad.

*You can always tone down the spice if your family is not big on spicy foods. The sweet of the honey will help calm the spice as well.
